Banana Bread (Linda Boyer)

Time

Ingredients

  • ⅓ c shortening
  • ½ c sugar
  • 2 eggs
  • 1 ¾ c flour
  • 1 t baking powder
  • ½ t baking soda
  • ½ t salt
  • 1 c ripe banana
  • ½ c walnuts (optional)

Prep/Equipment

  • Greased loaf pan

Directions

  1. Preheat oven to 325°.
  2. Mix all ingredients. Bake in greased loaf pan for 40-45 minutes, until toothpick inserted in middle comes out clean.

Homemade Vegetable Soup

Time

Ingredients

  • ½ bunch celery, diced
  • 1 onion, diced
  • 2 cans stewed tomatoes
  • 2 can tomato paste
  • 3 T onion base – jar or pkg
  • ½ head shredded cabbage
  • Stir fry frozen vegetables
  • Carrots
  • Pea Pods
  • Green Beans
  • 1 T Mrs. Dash

Prep/Equipment

  • Large pot

Directions

  1. Place all items in large pot and add water to cover. Cook one hour.

Yummy Granola

Time

Prep: 10 minutes              Ready In: 2 hours

Ingredients

  • 2 c ripe bananas
  • 1 c dates, pitted
  • 9 c rolled oats
  • 1 c unsweetened coconut
  • ½ c sunflower seeds
  • 1 c chopped nuts
  • 1 ½ c water
  • 1 ½ tsp salt

Prep/Equipment

  • 2 medium bowls
  • 2 Baking pans with edges, coated with parchment paper.

Directions

  1. Preheat oven to 225°.
  2. In a medium bowl, whip bananas and dates. Set aside.
  3. In a second medium bowl, combine the remaining ingredients. Add banana mixture to mixed ingredients.  Mix well.  Spread on baking pans.  Bake for 90 minutes, stirring every 30 minutes until golden and almost dry.  At 90 minutes, turn oven off and leave pans in to complete drying.

Notes/Suggestion

  1. Store in airtight container.
  2. This can be frozen.

Snack Crackers

Ingredients

  • 1 c vegetable oil
  • 1 ½ T dill weed
  • ½ tsp garlic powder
  • 1 pkg Hidden Valley Ranch Dressing Original
  • 2 pkg Oyster crackers

Prep/Equipment

  • Sauce pan

Directions

  1. Heat oil and spices.
  2. Pour over crackers.

One-Bite Party Pizza

Time

Prep: 10 minutes              Ready In: 20 minutes

Ingredients

  • 1 8-ounce package crescent rolls
  • Olive oil
  • 1 can tomato or pizza sauce
  • Grated oregano
  • 1 8-ounce package Mozzarella cheese, cut into ½” thick squares

Prep/Equipment

  • Baking sheet
  • Pastry brush, for brushing olive oil on dough

Directions

  1. Preheat oven to 450°.
  2. Separate crescent roll dough along perforations. Halve the triangles and half again, for 32 mini triangles.  Arrange on cookie sheet.
  3. Brush each with olive oil. Add a dab of tomato/pizza sauce.  Sprinkle with grated oregano.  Add a square of mozzarella cheese.
  4. Bake at 450° for about 5 minutes, or until cheese is melted.

Olive Cheese Bites

Serving Suggestion

Serve with crackers.

Ingredients

  • ¼ lb. natural cheddar cheese, grated
  • ¼ c margarine, softened
  • ½ c flour
  • ½ tsp paprika
  • ¼ tsp salt
  • 2 dozen stuffed green olives

Prep/Equipment

  • Electric mixer/blender.

Directions

  1. Blend cheese with margarine. Stir in flour, paprika, and salt.  Mix well until a dough is created.
  2. Mold a tablespoon of dough around each olive, covering each completely.
  3. Arrange on baking sheet and refrigerate 4 hours (or freeze for later).
  4. Preheat oven to 400°. Bake at 400° for 10-15 minutes.

Hot Hors D’oeuvres

Serving Suggestion

Serve with corn chips or potato chips.

Time

Prep: 5 minutes                                Ready In: 30 minutes

Ingredients

  • 1 8-ounce package cream cheese
  • 2 T milk
  • 3 ounce package chipped beef, chopped finely
  • 2 T minced onion
  • 2 T chopped green pepper
  • Dash of pepper
  • ½ pt. sour ½ & ½
  • ¼ c walnuts or pecans

Prep/Equipment

  • 8” pie pan

Directions

  1. Preheat oven to 350°.
  2. Mix all ingredients sans walnuts/pecans. Spoon into 8” pie pan.  Sprinkle with walnuts/pecans.
  3. Bake at 350° for 15 minutes. Allow to cool for a few minutes prior to serving.

This reheats well!

Shrimp Dip in Jell-O Mold

Ingredients

  • 1 ½ T unflavored gelatin
  • ¼ c cold water
  • 1 8-ounce package cream cheese, softened
  • ¾ c chopped celery
  • ¾ c chopped green onion
  • 1 c mayonnaise
  • 1 can shrimp, drained and cut up (or 1 small bag frozen shrimp, cut up)

Prep/Equipment

  • Jell-O mold

Directions

  1. Mix gelatin and cold water.
  2. Add and stir in remaining ingredients.
  3. Pour into favorite mold. Chill for one hour prior to serving.

  • 1 can shrimp, drained and cut up (or 1 small bag frozen shrimp, cut up)
  • ½ c sour cream
  • 1 8-ounce package cream cheese, softened
  • 1 small onion, chopped
  • 2 T chili sauce
  • Salt and pepper, to taste

Prep/Equipment

  • Medium bowl

Directions

  1. Mix all ingredients together. Chill for an hour prior to serving.

Notes/Suggestion

Spread an extra tablespoon of chili sauce across the top of the dip.  This adds a nice touch and tastes very good to those who like the chili sauce!

Radish and Cream Cheese Spread (Overnight)

Ingredients

  • 1 8-ounce package cream cheese, softened
  • ¼ c butter, softened
  • ½ tsp celery salt
  • Dash paprika
  • ½ tsp Worcestershire sauce
  • 1 c finely chopped radishes
  • ¼ c finely chopped onion

Directions

  1. Mix cheese, butter, celery salt, paprika, and Worcestershire sauce until smooth. Stir in radish and onion.
  2. Chill overnight.
