- ¾ cup shortening
- 1 cup firmly packed brown sugar
- ½ cup sugar
- 1 egg
- ¼ cup water
- 1 teaspoon vanilla
- 3 cups oats, uncooked
- 1 cup flour
- 1 teaspoon salt
- ½ teaspoon baking soda
- 1 cup raisins
- Place raisins in measuring cup, cover with water, microwave 3 minutes on high. Let sit until needed, then drain.
- Beat together shortening and sugar.
- Beat in egg, water and vanilla until creamy.
- Add remaining ingredients; mix well.
- Stir in raisins.
- Drop by rounded teaspoons onto a GREASED cookie sheet (or use parchment paper).
- Bake at 350° 12-15 minutes.
